Took me a little over a year to hit 100. Granted I wasn't uploading every week, so that's probably why it took a while. Currently I'm at 182. Had a video get more traction than usual so the last week I actually managed to nab 11 more subscribers.

I guess if you post a video with controversial content, and you know its likely going to get a bunch of dislikes (fairly or otherwise), then I can understand why one would hide them then.

I'd be thrilled if I hit 1000.

Hard to say. I think the game that I've played through the most is Legend of Zelda Ocarina of Time. But in terms of just gameplay hours... probably Super Mario Bros 3.

Lynda is a site that has tons of great tutorials if you're willing to pay a bit for them. Otherwise, just do a bit of searching on Youtube for basic video editing tutorials. Not all are perfect, but there's enough good ones out there to pick up some editing skills.
