If I was to make a video and someone used the full video within one of their videos, will freedom automatically claim monetization for that video?

I think it would depend on the context.
If they are using clips from your videos and then adding commentary and opinions based on/contradicting what you have said, it falls under fair use.
If the user is blatantly downloading your videos and re-uploading them, Freedom! won't automatically claim them. Instead, you have to flag the video and report it as infringing your rights.
